All our dishes are handcrafted, and we use products from our farm. Because of this, some items may occasionally be unavailable. All our pizzas, focaccias, bread, pasta, and desserts are made with organic, stone-milled flours. We offer two types of pizza: Pizza alla pala and Pizza al padellino. Pizza alla pala is a high-hydration dough made with semi-whole wheat flour and fermented using the biga method. Pizza al padellino is made with a biga starter as well but uses multigrain flour. The final proofing and baking take place in a small pan, giving it a unique texture.
